Low Fat Chocolate Chip Pumpkin Loaf

Makes One Dozen 2-oz Servings (as packaged)
100 Calories 6g Fiber 0g Fat

As prepared (12 Slices of Chocolate Chip Pumpkin Loaf)
121.3 Calories 6.4g Fiber 0.4g Fat

Ingredients:
1 package BlueBran VitaMuffin Mix (can buy at Super Target or online)

2 egg whites

1 cup water

1/2 cup Pumpkin Pie Mix

2 tbsp. Semi-sweet chocolate chips

2 tsp. Pumpkin Pie Spice (a combination of cinnamon, ginger, nutmeg, and all
spice can be used as substitutes)

Smart Balance Spray®

Instructions:
Preheat oven to 425°F. Lightly spray a 3-3/4 x 2-3/8 loaf baking pan; (We like
Smart Balance Spray®). Set aside. Using a sifter, remove blueberries from the
BlueBran VitaMuffin Mix. In large mixing bowl combine BlueBran VitaMuffin Mix,
water, egg whites, pumpkin pie mix, chocolate chips, and pumpkin pie spice. Mix
well. Spread batter evenly in loaf baking pan. Bake for 45-55 minutes.

Once cooled cut into 12 slices.
